Mickey Mouse Cupcakes: Super Easy. Super Fun.

Looking for a fun cupcake idea for a Mickey-themed birthday party or a Disney World vacation count-down? Or maybe, just because it’s Wednesday and raining again? Whatever your reason, these Mickey Mouse cupcakes are super easy and super fun. I found the idea on the Disney Family website a while ago. Not sure why it took me so long to try it!

 

Mickey Mouse Cupcakes ingredients

Ingredients:

Cake mix (any kind, I usually add a pudding mix), Cake frosting (or powdered sugar, butter, vanilla & milk to make your own), Chocolate sandwich cookies (bite-size & regular), Eggs, M&Ms, Oil (any kind), Red cupcake liners, Red food coloring and Red sugar sprinkles

Instructions

(1) Mix and bake the cupcakes per the box directions or your favorite cake recipe

(2) Prepare the buttercream frosting (by blending 4 cups powdered sugar, 1 stick butter, 2 tsp vanilla and 4-6 TSP milk) or use store-bought.  Mix with food coloring to turn the frosting red.

(3) Frost the cupcakes. Sprinkle with red sugar (preferably near a sink!)

(4) Pull apart the regular and bite-size sandwich cookies so you have a frosted and unfrosted side for each. You can set aside (or eat!) the unfrosted regular size pieces and the frosted bite size pieces.

(5) With a sharp knife, cut off the bottom of the regular size frosted cookie piece to create a flat edge.

(6) Attach two unfrosted bite size cookies to the back of the frosted regular size cookie to create the Mickey shape. The frosting of the cookie holds the ears in place. (It really does! I was skeptical too.)

(7) Set the Mickey shapes on top of the cupcake and add two M&M’s for the buttons.

That’s it! Super easy and fun. For once, a Pinterest pin turned out exactly as promised. Thanks Disney.

 

If you don’t want to use food dye, buy multiple sizes of cookies or mess with the sugar topping, these other variations worked well too. I kind of liked the mix of white and red together, especially if you’re planning to display a bunch of them. For more drama, try black cupcake liners. If you want to include Minnie in the fun, add a bow.

The Mickey shaped cookie-toppers tend to get soft once they’ve been on the cupcakes overnight. So for best results, try adding them to the cupcakes right before serving.
